What a surprise today. My mom made some Eggplant Parmesan! Now this is something that is so good, so tasty that it’s like a party in your mouth. Mom makes her own tomato sauce, which we call gravy. I’d love to know how many of you do the same and where you’re from?
Then she breads the eggplant slices and fries them. She uses lots of egg and breadcrumbs plus Parmesan cheese for this step. Of course there’s tons of mozzarella. But you know what? It’s not all of the ingredients or how she makes it, it’s the love in it.
She called me and Peanut to come over to eat. We had a great time, enjoying the delicious food, talking, telling stories to Peanut and laughing. The food was yummy, yes but the company was even better – if that’s possible.
I love eggplant parmesan!!! You are very lucky to have a mom that can call you and invite you over to eat such a yummy dinner! Send me some please! Pretty please!

I love eggplant parmesan, better than veal parmesan. Sounds good, I think that I will make some this weekend. It has been forever since I made it.
